Markus Gselmann
My name is Markus Gselmann, born on December 13, 1984, in Eisenstadt. After studying Molecular Microbiology at the University of Vienna, I felt the urge to see the world. For the next seven years, the city of Bergen in Norway would be my home.
As fate would have it, I was soon hired to build up a distillery that has since become known far beyond the borders of Europe. My prior experience from our small fruit distillery at home, which my father had run with the utmost care since my childhood, and my knowledge of chemistry and microbiology gained during my studies, proved to be the perfect combination for my new employers' master distiller, product developer, and production manager.
Although my job was very flexible and I had free rein, I still felt restricted by the given framework. The idea of owning my own distillery, where I could do as I pleased, quickly took root.
I quickly found a location in my town – on the former Coca-Cola Amatil site. In January 2019, I began renovating the premises. The project consumed countless hours of work and constantly presented me with new challenges.
First, the remnants of the building, which had been empty for over 30 years, had to be removed before I could even begin the actual renovation. This was followed by the installation of electricity and water lines, a sewage drain, and an automatic roller door – all done myself.
In August 2020, the time had finally come: the centerpiece, our distillery , could be built. Shortly afterwards, a tasting room with a bar was added, which today offers our visitors a unique ambiance in a rustic setting – with a direct view of our still.

The distillery
Nestled in the heart of a biodiversity hotspot known as Pannonicum, our distillery is surrounded by two breathtaking natural landscapes: the highest peaks of the majestic Austrian Alps and the expansive plains of the Hungarian Plain. The crystal-clear waters of the untamed, meandering Leitha River, along with the virtually untouched flora and fauna of the surrounding forests, significantly influence our products, giving them a distinctive character typical of this region.
Our professional still, supplied by our long-standing partner Kovoděl Janča sro from the Czech Republic, forms the heart of our distillery and guarantees spirits of the highest quality. The still is personally maintained and operated by our master distiller and is not only visually stunning but also a true masterpiece of modern technology and traditional coppersmithing. Controlled via a touch panel, it allows for individually programmable heating cycles precisely tailored to different types of spirits – ensuring we extract the maximum from every distillation.
The electrically heated copper boiler with a capacity of 200 liters is connected to a laterally mounted column – one of the central elements of the system. In this column, water is removed from the alcohol vapors. It consists of three so-called bubble-cap trays, on which the vapors first pass through a liquid phase before being subsequently passed through a water-cooled tube bundle heat exchanger, the dephlegmator.
In the final stage, the alcohol vapors flow through the column head, which features a large copper surface area, the so-called catalyst. They then enter the condenser, where they condense into liquid and are finally collected in stainless steel tanks. The catalytic effect of the copper neutralizes hydrogen sulfide, resulting in a particularly pure, refined, and harmonious flavor.
The technology we use continuously generates reflux (condensed alcohol) throughout the entire distillation process, which is returned to the main still and reheated. This allows us to produce higher-proof alcohol in a single run – a clear advantage over older single-boiler stills that require multiple distillations.
Another key advantage of our system is the particularly precise separation of heads and tails, which significantly contributes to the exceptionally high quality of our final products.

The name Bærenman®
"What does Bærenman actually mean?", "Who is this Bærenman?" and "How do you actually pronounce Bærenman?"
These are all questions I've been asked repeatedly over the past few years and months. There's no clear answer, nor should there be. But it shouldn't become something mythical either. Bærenman® is what each individual makes of it and allows. A Bærenman lives within all of us.
The name Bærenman® has two origins. On the one hand, it represents a homage to the nature of my homeland, which embodies the "bearish" and primal; on the other hand, it refers to an old story from my town.
My hometown lies in the heart of a biodiversity hotspot called the Pannonian Plain, bisected by the border river Leitha. Almost untouched by human influence, it meanders through the surrounding Leitha floodplains, carving its own path, reinventing its riverbed and appearance anew each year. This untamed nature is also reflected in the flora and fauna of the surrounding landscape, showcasing an incredible diversity of species. A corner of nature that still seems to be intact, a place where time is still described in terms of day and night, a place where soul and spirit can still be one with their surroundings.
In the heart of our small village of Landegg stands a monument called "Bärentreiber" (Bear Drivers), which symbolically depicts an old, traditional tale. Legend has it that long ago, a bear roamed the surrounding woods, spreading fear and terror. The bravest men of the village set out at night to capture the bear, but they were unsuccessful. Instead of a bear, they only encountered the prince's dog, for which they received scorn and disgrace from the neighboring villages. Since then, the people of Landegg have been commonly referred to as bear drivers.
The Bærenman® logo reflects, on the one hand, the primal and natural aspects within us, and on the other hand, modern humans in their urbanized world, increasingly shaped by technology and progress, where everything has to be faster and better, where evolution is practically on an assembly line and now overtakes us humans within the course of a lifetime. This is the challenge of our time: to keep these two parts of ourselves in balance and perfect harmony.

A dog named Flocke
As you've probably noticed, a white dog keeps appearing at my side. That's Flocke – a mixed-breed female who grew up on a landfill in Hungary and came to Austria from a kill shelter after a circuitous route.
Flocke has been by my side since 2012. She even accompanied me to Norway and is now practically the mastermind of our company – because one thing is certain: no other dog has such a keen nose for excellent spirits as she does.
